223 - Everybody, Move ya Body
Are you moving ya body?
Today we're diving into our latest adventures at Whiskey Live Dublin 2026, taking stock of the current Japanese whiskey landscape, and giving you a little sneak peek at what we've got planned for Beyond the Pale this weekend.
222 - The Speed of Life
Everything lately feels like it's on fast forward, a lovely, bright, juicy sort of fast forward. Today, we're reviewing what it's really like for a Cork man in his 30s to experience Ibiza, catching up on the goings-on at Forbidden Fruit in Dublin, and, as always, sharing a few topical drinks thoughts.
221 - Fine Dining
You’ll never believe it, Mike has had a whirlwind day of last-minute packing. We chat through keeping a watchful eye on developing ‘notions’, the wonderful New York bar ‘Double Chicken Please’ (we’ve never been) and the spectacular attention to detail some bars and restaurants employ that often goes completely unnoticed.
220 - The Lev
Today we’re chatting through meeting new people, fellas running questionable cask sales programmes while taking pretend runs and drinking low-calorie beer alternatives, how some large scale venues struggle to consistently serve ‘good’ drinks, and the new Bavaria Ultra, and no, we’re not losing our minds… we think.
219 - Juicy Grapes
Are you well? Today Matt booked the wrong flights immediately after jumping off a flight, there’s been some new experiences with Moscatel wine, and as more time passes we’re realising we may eventually morph into our fathers
218 - Thoughts of a Banker
Bank Holiday scaries, the potent terror of nicotine gummies, the benefit of having local restaurants absolutely stacked with top-quality produce, and brotherly stag duties.
217 - Skinny dipping in Nerja
Vibrant day to you, friends! Today the podcast wanders through territory such as: the inner workings of anti-perspirant, whether younger people (or people in general) are actually drinking less despite the headlines, and the building excitement around upcoming holidays to Spanish territory. ¡Buen día!
216 - 600 beer’s, a manifesto.
The first hints of summer are here, so we’re chatting early-season drinking culture, the shift in mood when the sun appears, and the little rituals that come with it. We also look ahead to some upcoming goings-on at music festivals and what the months ahead might have in store.
215 - Eating and Drinking our way through it
McIlroy was wrong: Irish food is class.
Ordering dirty chai lattes isn’t always straightforward.
Mike returns to his seasonal role as our Dingle correspondent, while Matt slips into his new position as wine correspondent.
Plus, more thoughts and feelings on the recent fuel protests.
214 - Huntin’ Wabbitz
We’re back, just the two lads, after a joyous run of guest episodes with some beautiful people. Today: fuel protests, upcoming festival bits, and tales of drinking in some fairly ropey kips… not us, a friend of ours.
213 - Ali Dunworth II
Today we welcome back Ali Dunworth. Ali is one of the most active and in-tune food and drinks writers in the country. We chat through the ins and outs of writing a book, her current “whiskey era”, how the Michelin Guide really works, and plenty more.
If you haven’t heard our previous conversation with Ali, we’d recommend starting there, just search “Ali” in our search bar or look for episode 113.
Mind yourself, cheers x
212 - Alice Carroll II
Today we welcome back Alice Carroll. Alice has been leading the charge for the modern face of Irish whiskey with her team at Foxes Bow over the past few years. Now based in Austin, Texas, she’s deep in the world of brand building and creative marketing, and as another Texas-based Matthew we love would say… L-I-V-I-N.
If you haven’t heard our earlier conversation with Alice simply type ‘Alice’ into the Centre Cut Podcast searchbar or look for episode 104.
211 - Andy Ferreira
Today we welcome Andy Ferreira to the podcast. Andy is the co-owner of both Cask and Paladar in Cork City, two of the best cocktail bars in Ireland and shining examples of Cork hospitality. Andy and the team have created a real sense of soul and purpose in their bars, and we couldn’t be bigger fans.
210 - Janice Snowden
Today we’re joined by Janice Snowden, UK Ambassador for Bushmills Irish Whiskey.
Janice is a former colleague of ours from our time at the Jameson Distillery on Bow Street, and since then she’s gone on to represent some of the biggest Irish whiskey brands overseas, working across both the United States and the UK.
Now based in London, Janice is preaching the gospel of Irish whiskey through the wonderfully juicy vehicle that is Bushmills.
209 - Barbara Nealon
This week we’re joined by Barbara Nealon of Saint Francis Provisions in Kinsale. The restaurant holds a Michelin Bib Gourmand, and Barbara herself recently won Michelin’s Award for Service.
It’s a lovely reminder that hospitality isn’t just about food, it’s about care, creativity and humanity. From quietly dropping plates in front of guests to picking up international recognition, Barbara and the team are keeping Kinsale, and Ireland, firmly in the “we do it well” category when it comes to looking after people.
208 - Liberty
Today on the podcast, we’re wandering through the sheer power of the women moving and shaking in food and drink, the potential future of THC drinks, the pinch modern life is putting on the purse strings, and if you’re anywhere near Cork, why you need to get into the lads at Cold Cuts for some hot, sexy hospitality.
207 - Random sunburnt bloke from Kiltipper, circa 2003.
Happy Wednesday, sweet bábógs. You’re lookin’ fresh — fair play.
Today we’re chatting through family favours, the Yamamori situation, Valentine’s Day (with yourself or with someone else), and a few plans we’ve cooking for the year ahead.
206 - Shia LaBeouf could most likley play the role of a Golden Retriever
Today we’re digging into the hospitality lifestyle, the people every industry forgets, and whether passion for food and drink is real or just performance.
205 - Ayahuasca Laced Moldovan Wine
Heya cuz, feeling fresh?
Nightclubs, bar scene Instagram, kefir comebacks and the magic of Polish shops.
